Cup This: Azusa Pacific University |

In early April, Azusa Pacific University, in Azusa, Calif. (near Los Angeles), hosted a private cupping for university professors, staff, administrators, and a few undergraduate students. I facilitated the cupping with Molly Morton, the supervisor at the on-campus Cornerstone Coffee House. Azusa Pacific University serves Fair Trade and organic offerings in all of their eateries throughout the campuses.
The purpose of this cupping, as with other tasting events, was to help the coffee drinker identify different flavor nuances, body, acidity, and aromas. Being able to identify exceptional coffee by smell and taste is an important step to brewing up the perfect cup. The Azusa participants cupped three different coffees from three different countries: Organic Bolivian, Organic Sumatran and Organic Ethiopian, each at a full city roast. (A full city is darker than a medium roast but lighter than a French roast.)
“We chose Equal Exchange after extensive research of Fair Trade companies that serve large university food service departments, a campus-wide taste test, and a number of market research surveys,” Morton said.
