Fair Trade Angel Clouds
From Chuck and Amy Cameron of First Presbyterian Church in Wasilla, Alaska

Ingredients
  • 3 egg whites
  • 1/2 cup sugar or other granulated sweetener
  • dash salt
  • 1/2 tsp almond (or other nut) extract
  • 2 Tbsp flour
  • cinnamon and nutmeg to taste
  • 1 cup Equal Exchange Organic Tamari Roasted Almonds, chopped
  • Equal Exchange Organic Panama Extra Dark, Orange Dark, or Ecuador Dark chocolate
Beat first three ingredients until stiff. Add extract and stir until blended. Combine flour, cinnamon, and nutmeg and fold into egg white mixture. Fold almonds into batter and drop by heaping tablespoonfuls onto greased or parchment-lined cookie sheets. Bake at 400° for 15-20 minutes or until lightly browned. Cool on rack and let dry completely. Drizzle melted chocolate over tops of cookies. Enjoy!
