Quiche Appetizer

Ingredients 
  •  3 c. thinly sliced Italian squash or zucchini. It’s a good idea to wash the squash, but leave the skin on.
  • ½ c. finely chopped onion
  • 2 Tbsp. snipped parsley
  • 1 clove finely chopped garlic – If you really like garlic you might want to use 2 cloves
  • 1¼ c. biscuit mix (Bisquick or another brand or make your own, see below)
  • ½ c. grated Parmesan cheese – Better if you have freshly grated cheese, best if you like cheese to use a little bit more.
  • ½ tsp. salt
  • ½ tsp. seasoned salt
  • ½ tsp. oregano – You can use marjoram if you happen to be all out of oregano. 
  • ½ tsp. Za’atar Mix (optional)
  • black pepper – a generous dash
  • 4 eggs, slightly beaten
  • ⅓ c. Equal Exchange Organic Extra Virgin Olive Oil

Directions 

Step 1 – Heat the oven to 350 degrees.  Grease the pan lightly, 13x9x2 or 9x9x2.

Step 2 – You can do all of this on the same cutting board, using the same knife.  And dump it all together into a good-sized bowl.

Step 3 – Add these next ingredients to what you already have in the bowl.

  • 1¼ c. biscuit mix (Bisquick or another brand or make your own, see below)
  • ½ c. grated Parmesan cheese – Better if you have freshly grated cheese, best if you like cheese to use a little bit more.
  • ½ tsp. salt
  • ½ tsp. seasoned salt
  • ½ tsp oregano – You can use marjoram if you happen to be all out of oregano. 
  • tsp. Za’atar Mix (optional)
  • black pepper – a generous dash!

Step 4 – Now add these last ingredients to the bowl. 

  • 4 eggs, slightly beaten 
  • ⅓ c. Equal Exchange Organic Extra Virgin Olive Oil 

Steps 5, 6, and 7 – Mix everything together and spread it evenly in the pan you have prepared. Put it in the oven and let it bake for 25-30 minutes (9x13x2) or maybe a little longer (9x9x2) or until you think it’s done.  When it cools, cut into pieces about 2”x1” or whatever size you like and proudly serve it!

Tip: The recipe for these appetizers has been adapted to accommodate the use of olive oil.  If you should choose not to use olive oil (it’s so good for you!), adjust the amount of biscuit mix to 1 cup and the amount of oil (any other kind) to ½ cup.

Homemade Biscuit Mix

        4 c. flour
        1 tsp. salt
        2 Tbsp. baking powder
        ½ c. powdered milk
        ½ c. Crisco

Sift dry ingredients together; cut in Crisco.
