Spicy Chocolate Cookies

Ingredients 
  • ¾ c. plus 2 Tbsp all-purpose flower
  • 1/3 c. Equal Exchange Organic Spicy Hot Cocoa
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • 1/8 tsp salt
  • 4 Tbsp butter
  • 1/3 c. sugar and
  • 1 Tbsp honey (I used pure wildflower honey from Bulgaria)
  • 1 large egg
  • ¼ tsp vanilla
  • Enough confectioners’ sugar to roll cookie balls in before baking.

Directions 

Blend dry ingredients, and then add butter and wet ingredients. Beat until fully blended.  If too dry, add a little water, if too wet add a little flour. Make into 1 in balls, and roll in confectioners’ sugar.

Place on ungreased cookie sheet and bake at 350 degrees for about 12-15 minutes.  If you like them crispy, maybe 15-18 minutes.
